Everyone has their favorite catfish dish. For most of us, it's all about the time-honored classic – battered, fried, and delicious. We asked some of our team members to tell us about their favorite catfish dishes. After all, who would be better to ask than the experts at our farm?
Today we're shining a light on team member Marketa Smith, our front office receptionist, who is often the first face customers see when they walk through our doors.
Q. How long have you been working at Simmons?
A: I've been working at Simmons for 6 years.
Q. What is your job title at the farm? What are your responsibilities?
A: I am the front office receptionist.
My primary job is waiting on customers, and I also do some clerical work.
Q. What do you like most about working at Simmons?
A: Definitely the people! This is one crazy group, every day is an adventure.
Q. How often do you eat catfish as a meal generally?
A: Once or twice a month.
Q. What is your personal favorite catfish dish/recipe?
A: It’s a crusted catfish in a horseradish remoulade sauce.
Q. What do you like about this recipe?
A: It’s a different taste and the sauce is killer!
Q. Do you prepare your favorite dish yourself?
A: My son, Kenny, cooks our catfish mostly. During the recent ice storm, our lights went out. Kenny cooked the crusted catfish in the dark with a headlamp on and it was the best meal ever!
Q. How often do you eat or prepare this specific catfish dish?
A. Maybe once every couple of months.
Q. Is there anything else you would like to add?
A: Mr. Simmons is always stressing quality, and while we are not perfect, we strive to make sure we put a good product out there. From what I hear at the front counter – we are doing a darn good job!
