It is no secret that our employees are the heart and soul of our operations at the farm. Simmons is fortunate to have so many amazing employees. Our company would not be where it is today without the talent and dedication of our team members, and their hard work really matters. The character of our employees is reflected in the high-quality catfish products they produce every day!

Everyone has their favorite catfish dish. For most of us, it's all about the time-honored classic – battered, fried, and delicious. Our team members are specialists at what they do. And we were curious about the recipes that our catfish experts enjoyed the most, so we asked them.

Today we're shining a light on Patricia Hollins, a Quality Assurance Supervisor at the farm. We asked her about her favorite catfish dish.

Q. How long have you been working at Simmons?

A: I've been working at Simmons for 9 years.

Q. What is your job title at the farm? What are your responsibilities?

A: I am a Quality Assurance Supervisor. I work to ensure timely and effective implementation of all company policies, procedures, and activities involved in assuring the quality of our products. I supervise the plant quality assurance function as directed. I improve working conditions like safety, quality and productivity.

Q. What do you like most about working at Simmons?

A: I love working with the people.

Q. How often do you eat catfish as a meal generally?

A: About once a week.

Q. What is your personal favorite catfish dish/recipe?

A: My favorite is Blackened catfish.

Q. Do you prepare your favorite dish yourself?

A: Yes, I do.

Q. Is there anything else you would like to add?

A: Simmons is a very exciting place to work, it’s a very family oriented establishment. I have been able to advance my career all while going to college and earning a degree in Culinary Arts and more. I'm so glad to be given the opportunity to work at this establishment.
